Although it might be alluring to lay down sets & runs as quickly as possible, doing so exposes a player to their opponents rearranging their cards. Waiting until a player has gathered enough cards to form multiple sets or runs at once is usually preferable, as it makes it more difficult for opponents to thwart their plans.
